Favourite Gluten-Free Buns

These buns are a life-saver! They are quick to make (for a yeast recipe) and are incredibly versatile. I use these as hamburger buns, dinner rolls, and in small slices for kid-sized sandwiches. I usually make these once a week.

Favourite Gluten-Free Buns

These buns are good anytime and are incredibly versatile! They're relatively quick to make and are a staple in my home for my children. I like them because they use flax seeds to bind the flours instead of xanthan gum. They also pack well for lunches. So many wins!

Ingredients

Dry Ingredients

  • 1 cup brown rice flour
  • 1 ¼ cup sorghum flour
  • ¾ cup tapioca flour or arrowroot powder
  • 1 tsp salt (or one large pinch)

Wet Ingredients

  • 2 cups warm water
  • 1 tbsp instant dry yeast
  • 1 tsp maple syrup
  • 2 tbsp olive oil or pumpkin seed oil
  • 1-2 tbsp maple syrup or honey
  • ½ cup ground flax seeds
  • 1/4 cup psyllium husks

Directions

  • Place the warm water, yeast, and maple syrup in a dish.
    Whisk together and let the yeast get foamy (about 5-8 mins). If it doesn't get foamy, restart.
    Tip: If the weather is cold, I like to sit the yeast mix bowl in another bowl with warm water. This let's me make sure the yeast mix stays warm.
  • Mix all of the dry ingredients (the flours and salt) in a separate bowl.
    Stir and set aside.
  • Once the yeast is proofed, add in the oil, syrup, flax, and psyllium husks.
    Whisk all together and let it sit for about 1-2 minutes until the mixture gels.
  • Pour the jelly-like yeast mixture into the flours.
    Stir everything together with a wooden spoon until the dough is well mixed.
    Tip: At this point the dough can be a little sticky so I like to add a bit of oil to my hands for the next step
  • Quickly and gently, form a ball with your hands. Make your bun a little smaller than you want as they will almost double in size when they rise.
    Place the bun on a baking sheet (lined with parchment or lightly oiled).
    Continue picking up the dough and forming the buns. At the end, you might need to add a little of one bun to another so they are all around the same size. (This recipe makes six large hamburger buns or seven medium sized buns.)
  • Preheat the oven to 375 degrees.
    Let the buns rise for 1hr.
  • Bake the buns for 30 – 35 minutes.
    Cool and enjoy!

Tips

These buns will keep in a plastic bag on your counter for about three days, but after that (if there are any left), I keep them in the fridge. They get soft again by lightly toasting them.
