Simple Papaya Salad

Hello, new lunch friend! This beautiful papaya salad is what lunch time calls for. Papaya, Avocado, Green Onions, Greens, Cucumber, and Lime all seem to work together and cover all the necessary tastes. Just pop everything together in a container in the morning and it’ll be waiting for you all fresh and tasty for your lunch hour. This salad is also easy to make so it doesn’t take long to prepare in the morning. Whew! One less complication is always a good thing. I have a feeling this would be amazing with a side of roasted sweet potatoes too or with the avocado, lime, and papaya seeds blended together as a dressing, but I haven’t tried it yet because…well… mornings.

The best part of this salad is that it’s also 28-day cleanse friendly for any of you Medical Mediumers who are doing or still eating close to the 28-day cleanse. (Just minimize the salt and avocado and increase the quantity.) Hooray!

Simple Papaya Salad

This easy-to-prepare salad works for most diets and best of all, tastes great packed up for lunch! The avocado and papaya are a dreamy pair. Enjoy!

Ingredients

  • 2-3 handfulls mixed greens, shoots, and/or spinach
  • ½ large papaya, sliced or cubed
  • 1-2 green onions (sliced thin)
  • 1 avocado, sliced or cubed
  • ½ cucumber, sliced or cubed
  • ½ lime, juiced
  • salt and cracked pepper to taste

Directions

  • Mix everything together and serve (or pack for lunch). It's that easy.

Tips

If you’re doing the 28-day cleanse, make sure to minimize the avocado and the salt.
